Hanukkah with raspberries



We have already written about the cottage cheese cookies that our grandmothers baked. But this topic is inexhaustible. It's December again, Hanukkah and children's holidays, which means we need to come up with a delicious, beautiful and funny decoration for the holiday table. What if not cottage cheese cookies?

This time we propose to try a very simple and quick recipe, but also time-tested. These cookies can be prepared by the whole family, entrusting the children with the most important task - rolling out the dough and cutting out various funny figures from it. The ingredients can be found in any refrigerator - cottage cheese, flour, sugar and butter. You need very little sugar - and this is another advantage of this recipe. Before serving, the cookies can be slightly sweetened by sprinkling with powdered sugar, and, if desired, decorated with berries, such as raspberries. There are no berries in the traditional recipe, but the taste of the berries goes well with the taste of cottage cheese cookies.

You will need:

◾200 g cottage cheese,

◾150 g butter,

◾one and a half cups of flour,

◾half a glass of sugar,

◾a packet of vanilla sugar,

◾powdered sugar,

◾raspberries (can be frozen).


Cut the butter into small pieces and grind with cottage cheese. Add regular and vanilla sugar and stir. Then add flour and knead the dough with your hands. Place the dough in a bag and leave it in the refrigerator for half an hour.

Then roll out the dough not very thin, but not very thick and cut out the cookies

using molds. Preheat the oven to 200 degrees, cover a baking tray with baking paper, wipe with olive oil and place the cookies on it.

Bake for 10-20 minutes until golden brown. Remove the cookies from the oven and use a strainer to sprinkle with powdered sugar. Before serving, garnish with raspberries.
